Jaleo at the Cosmopolitan is one of José Andrés' restaurants. They have a very good selection of tapas and wines that will pair off well with all of the different food items. Paella here is made over a wood fire. Large groups can get an entire pan of paella, but if just 1 or 2 people you'll be limited to the paella selections of the day that are available for smaller groups. I had a paella that had rarebit and chicken. It was very tasty and flavorful, but the one thing to watch out for is that they serve in the traditional style of bone-in the meat. Service here was very good, too.
