| - Best restaurant in Las Vegas overall. Eaten here over 50 times over the last 4 years living in LV. Lotus has had a few slight ups and downs in that time, mostly in regards to speed of service. In spring of this year they apparently hired a ton of new wait/server staff, and they are a young professional crew who do a fantastic job. The half dozen or so times I've been there this summer the service level has been exemplary. Their cuisine is the most consistently delicious of any restaurant I've ever dined in, including dozens of michelin starred and james beard nominated. The best kept secret of Lotus' menu is the deep fried Lobster. It's always at least 5 lbs and runs $145 per, must call ahead to order or inquire as to the availability of Lobster. It's deep fried in the shell, then cut in sections and pan fried with corn starch sauce and veggies. The result is moist, flavorful lobster meat that comes out of the shell in perfect huge chunks! It wan't until about a year ago that my wife and I first had the lobster, we asked on a flyer on a monday night and they sold us one that was leftover from a party they night before. I guess they pre-ordered 10 and only ate 9, so we ordered it for just the two of us. There was a big party of about 20 ppl in the adjacent room and they came over in shifts to take pictures of our lobster, it's really that much of a spectacle! Other must try dishes include but not limited to: Short Rib in Panang, Drunken Noodle Prawn, Roasted Duck Curry, Crispy Catfish Salad, and I enjoy the snapper with thai chili and basil preparation. If you are visiting alone or with a group of 30 this is the place to go! Local tip: If you show up when they open (5:30) for dinner without a reservation, expect a 5-15 minute wait. 6-8:30pm expect a wait of 1hr+, after 8:30 10-20 minutes depending on the day. Make a reservation ahead of time, and don't be more than 5 minutes late or they'll cancel it.
