| - My dinner at Sage was the most disappointing of my recent trip to Las Vegas. The experience just did not live up to the many other fine dining options available in Vegas.
My meal started out fine, with a glass of Schramsberg Sparkling Wine and an excellent Bacon studded Roll. That was quickly followed by a gift from the Chef. A small thimble full of potato soup with a tiny potato chip on top. I have often found that these Chef's Gift courses can be my favorite bite of the night, because the Chef packs as much flavor and technique into the item as they can to showcase their talent. This course did none of that.
My appetizer was the oft mentioned Foie Gras Brulee. This rendition had a Huckleberry Compote, Cocoa Nibs and Toasted, Salted Brioche. It was good, but the Brulee Crust combined with the Compote made it too sweet for me. I did not taste any Cocoa Nibs, which might've cut the sweetness. When I scraped the sweetness away and scooped up the Foie Custard up with the Salted Brioche, it was rich and creamy and actually tasted very good!
My Entrée was the Maine Day Boat Scallop with Braised Oxtail, Trumpet Mushrooms and Salted Caramel Reduction. This dish just confused me. The Scallops were only seared on one side and the Reduction was poured over them at the table, which defeated the purpose of searing them to begin with. I am sure the Reduction was meant to poured around the dish. The Braised Oxtail was good but didn't really have a place in this dish. My last Scallop even had some grit in it. That should never happen! The description said it came with Trumpet Mushrooms. Mine had 1/2 of one Trumpet Mushroom. This is close to false advertising!
Service throughout my meal was prompt, but aloof and cold. They are wheelchair accessible, but to be honest, I don't see myself coming back anytime soon!
