The only time to properly evaluate croissants is just after the establishment opens for business that day. Today (Sunday) I was at Nadege at 9:30 to give their croissant another try. It was good, definitely better than the one I tried at Clafouti (more on Clafouti when I review them). I'll stick with the 3 stars as I was disappointed the croissant was not warm even though I was there just after opening. It would probably be four stars out of the oven.
The modern display cases look much better when they are full, by the way.
