I've been here many times in the past 6 years (my first visit was in 2011) and it's one of the most consistently delicious and hospitable restaurants on the entire strip. Hell, in Las Vegas for that matter.
DO get the tasting menu - it's an insanely ridiculous amount of food for a phenomenal value (don't quote me, but it's like 11 courses/tapas for $77 or something? Whatever, it's 100% worth it).
A few of my favorite dishes (descriptions mostly copied from their menu, side notes are clearly mine):
- Salmon tartare and salmon roe cone
- Cold-smoked pork, rosemary oil and black olive salt - this arrives under a dome filled with smoke - the presentation is as amazing as the flavor
- Fried organic egg topped with caviar
- Caña de cabra con higos - A soft, semi-sweet goat's milk cheese paired with raisin walnut bread and fig jam
- La Peral con membrillo de peras y anacardos - sharp and creamy, mixed milk blue cheese paired with pear gelée and spiced cashews
- Lomo ibérico de bellota Fermín - Smoke-cured acorn-fed pork loin
- Gazpacho - it has beets and goat cheese and it haunts my dreams
- Patatas bravas - A Jaleo favorite with spicy tomato sauce and alioli
- Croquetas de pollo - Traditional chicken fritters - beyond creamy and lip-smackingly delicious
- Canelone de Pollo - Canelone pasta filled with roasted catalan-style chicken finished with Manchego cheese and pine nut praline (share this or you'll never fit into your pants again)
And whatever you do, don't forget the pan con tomate - it's tomato bread that you'll want to eat every day for the rest of your life.
The wine list is expansive and varied and the cocktails are delicious. Watch out for the sangria and signature gin & tonic - both delicious, both just this side of deadly.
