| - Todd English's Olives is an Italian and Mediterranean Restaurant inside of the Bellagio.
For drinks, I had a Fruit Punch, which consisted of a blend of fresh fruit juices. After placing our food order, our server brought us Onion Focaccia with Olive Tapanade.
For appetizers, we shared the Grilled Squid and Octopus, Portobello Flatbread, and Caesar Salad. The Grilled Squid and Octopus was served with chickpeas, tomatoes, roasted garlic, and parlsey in a chickpea vinaigrette. I didn't like how the squid and octopus were a bit slimier than what I was used to. The Portobello Flatbread consisted of dough brushed with white truffle oil and wild mushroom puree, topped with fontina cheese, red onion, and roasted portobello. I liked how the edges were crispy.The Caesar Salad consisted of freshly chopped romaine and kale tossed with herb croutons and parmesan cheese in a Caesar dressing and garnished with salty anchovy fillets.
For entrees, we ordered the Butternut Squash Tortelli, Seafood Linguine and Olives Burger. The Butternut Squash Tortelli consisted of house made tortelli stuffed with butternut squash, served in a brown butter sauce, and garnished with amaretto cookie crumble, fresh sage, and shredded parmesan cheese. It was truly delicious but a bit on the heavy side. The Seafood Linguine consisted linguine cooked with
Prince Edward Island mussels, white fish, baby shrimp, chorizo sausage, and crushed tomato in a flavorful roasted garlic crema. It was nice of them to split it into two portions for no additional fee. The Olives Burger consisted of juicy beef patty topped with white cheddar cheese , caramelized red onions, tomato, and lettuce in between grilled buns and served with French Fries.
