Yum yum yum. From start to finish, this was a delicious meal with delightful service and a very informative walkthrough of the business.
I ordered the shoyu ramen with mixed veggies. The bowl could have cradled a small child. I was in physical pain from eating so much, but it was so good that I had to eat it all. The noodles, made fresh at their Chicago location, were cooked to perfection. The broth was really the star. I've had some many bowls of ramen where the broth is mediocre and not memorable. This broth, which is a mild dashi base, was packed with flavor.
The meal was rounded out with delicious mochi, green tea and red bean. I picked the red bean but it's not for everyone. It isn't very sweet and has a more earthy flavor. I was a big fan.
10/10 would recommend, and I'll definitely be back. So far the beat ramen place in Madison.
