This is strictly a review of the pizza, I have not had anything else on the menu for years. I don't hand out 5 stars for pizza easily, but the honest truth is that this is one of the best pizzas in Charlotte. Many people don't know about it because the location sucks. If it were in one of the destination neighborhoods this place would be packed. It's not close to me, over a 30 minute drive. So when I do stop by it's always a treat. I haven't had the chance to speak with the owner and learn about their process, but I can tell they use great ingredients and know what they're doing when it comes to making pizza dough. My most recent pie was a White pizza (forgot to take a pic, sorry). I grabbed it to go so it sat in a box for 15 minutes, but the crust still had the great stone cooked texture I like. It had a bit of chew and a little snap, without being tough. The flavor of the dough was also nice. It's one of those crusts you just have to eat when you get to the end. Too bad it's a little out of the way for many Charlotteans, but it's worth a trip if you really like seeking out great pizza.
