Why?
When Keller was contemplating opening a restaurant in Vegas, he refused to consider putting up a branch of The French Laundry there because, in his opinion, Vegas was too informal and boisterous for an experience which intended to be intensely focused and all-encompassing.
Scarpetta, however, proves that this idea is outdated.
This is a restaurant, located right in the center of the action on the Las Vegas strip which, despite the non-ending commotion, offers an experience in which the diner is able to enjoy the entirety of a meal without nary a distraction.
Las Vegas, instead of detracting from the experience of a fine meal, is now enhancing it.
