Been going here since Bianco himself was making pies at the oven. That was also when it was normal to have 2-3 hour wait at nearly any given time.
Fast forward to this recent visit:
(+):
-Excellent buffalo mozzarella caprese starter. The cheese was very fresh and perfectly salted; the tomatoes were tasty.
-The Wiseguy and Rosa pizzas were the usual expected flavors. You can not go wrong with Schreiner's sausage!
(-):
-$5 service fee +tip to valet park. This is el cheapo move on the place if you're already patronizing the joint.
-The whole joint needs a good scrubbing! It gets more grimy and dirty with each visit. The bathroom was not tidy. Reason for the 3 stars.
-The crust. Seems that it's a smidge thinner (yes it's already thin) but the crust had tad more chew and less cracker feel in the past. Also, way too many burn spots on the crust edge. Bianco used to monitor those with just enough to add flavor but not mouthful of char.
Overall, we prefer this Bianco's rather than the one at T&C because we feel the oven produces better flavor. We also enjoy seeing the long time employees hustling around making sure things are moving like clock-work.
