What makes a good torta? The bread! And San Cosme gets it right. Unfortunately it falls short in some other respects. I ended up going with the al pastor which wasn't done off of a spit, despite the drawing of the special at the front counter. Feeling a little bit swindled after watching them pull a piece out of the fridge and throw it on the flat top, I tried to stay positive. Upon getting the sandwich, my fears came true. The pastor lacked the crispy outside and lack acid to bring out its flavor. And while the bread was high quality, I wish it was grilled a little longer and had more texture. Lastly, the horchata had a lot of sediment and wasn't enjoyable and the jamaica was quite watered down.
