If you're staying at the Ventian/Palazzo, Bouchon is your best bet for breakfast. With French bistro while still overlooking the Venetian pool area, you get a low key Vegas vibe. Bouchon is reasonably priced (for Vegas), and serves up well executed breakfast fare that'll get you out of your morning funk/hangover and ready for a new day. The quality of the food and service is just as good as you'll find at the Bouchon in Beverly Hills.
For breakfast they start you off with some magnificent bread (shaped like leaves) and butter. If you like bread you'll mow this down as soon as it hits the table. For something hearty try the Hachis de Merguez, a sausage and potato hash served with two perfectly cooked eggs and toast. The sausage has an earthy, Morrocan-style flavor, but it's not too strong or overwhelming. If you want dessert for breakfast, the uber-rich Pain Perdu will knock your socks off. Brioche french toast with whipped cream and blueberry compote. It's so decadent you don't really need the maple syrup.
