After 3 days of horrible, expensive food at Caesar's Palace (staying there for work), I've been meandering over to the Bellagio for meals now. Arrived at Circo around 6:15p and was seated immediately - only the tables by the window overlooking the fountain were full.
Service was impeccable - water glasses constantly and subtly refreshed with a smile. Four different kinds of bread in the bread basket - my favorites were the focaccia and olive. I ordered the mushroom/sausage pizza and it was delicious! Being a huge fan of thin crust pizza, I usually leave behind huge chunks of crust. Not to worry here. There was also just a hint of sea salt in the dough, which was baked to near perfect crispness. The toppings were hearty and flavorful - housemade sausage, mushrooms, olive and artichokes. The menu should come with a warning though - I only had enough stomach real estate for 1/2 of it and gave away the leftovers on the way back to my hotel.
I paired the pizza with a glass of Rose wine - Montepulciano d'Abruzzo Rosato - and hope that they keep this excellent rose on their wine list for a while - fruity but not too sweet.
