  • BACKGROUND True Food Kitchen is one of the greatest success stories in the history of the food and restaurant industry. TRUE FOOD KITCHEN: THE HISTORY The history of True Food Kitchen started in Tucson in the late 1990's, when Dr. Andrew Weil met with Phoenix restaurateur Sam Fox. Dr. Weil was adamant about making restaurants available that not only adhered to his anti-inflammatory diet, but would demonstrate how delicious healthy food can be, as well as having an environmental awareness, all in an inviting atmosphere. Dr. Weil's anti-inflammatory diet is not a "diet" per se, but is based on the staggering evidence that chronic inflammation is the root cause of many chronic illnesses, including heart disease, many cancers and Alzheimer's disease. This is also the concept behind anti-aging medicine. THE MENU The menu is a work of art. Dishes are influenced by Mediterranean, Asian, and Californian cuisine, and include breakfast, soups, appetizers, salads, pastas, rice and noodle dishes, wood grilled dishes, sandwiches, burgers, brick oven pizzas and desserts. CONCLUSION I recently ate at the Biltmore location for brunch. I had the huevos rancheros with fresh corn tortillas and bottomless mimosas. The food was scrumptious and the staff was delightful.
