I wasn't sure whether Forequarter would be for me or not. I don't eat meat or dairy, and it seemed like the sort of restaurant that would focus heavily on Wisconsin's local meat and dairy products.
I was happily surprised to find a number of vegetarian appetizer options and an entree option that were either dairy free or could easily be made so. Fried mushrooms were excellent, rich in texture and flavor, and the potato salad was tasty.
The market vegetables and heirloom beans came with ricotta but I asked for that to be left off. The server immediately offered to swap sauces on the dish if I needed a dairy free meal, which was thoughtful. It wasn't immediately apparent that the usual sauce had butter in it, but she had my back.
The gracious service was the highlight of the meal, followed by the beautiful decor and classy ambiance. My food was tasty, but overall I prefer the brighter flavors and vegetables at Lao Laan Xang or Bunky's. If anyone wants to go out for a finer dining experience, however, I'll definitely recommend we head to Forequarter.
