  • We have refrained from Pancho's based on reviews that emphasized the high price of food. Our visit was prompted by a 2 for 1 coupon. The restaurant is beautifully decorated with lots of plants, water features and colorful tiles. Our server Claudia was very friendly and helpful. She was busy with several tables but checked on our satisfaction and drink refills several times. She definitely was interested in providing great service. The Cadillac Margaritas were excellent and comparably priced. The complementary chips and salsa were very good. Tasty salsa with large pieces of tomato. Shrimp Diabla Puffy Tacos consist of two flour tortillas filled with shrimp sauteed in a mild Diabla Sauce topped with shredded cabbage and chipotle. On the side were re-fried beans, rice, salsa and guacamole. This was a very tasty taco with plenty of shrimp. The bean burrito was large enough for two people. More competition in Mexican food has arrived in Summerlin and now provides several choices. Pancho's appears to have the edge on decor but not price.
