| - On my first day back in Vegas, decided to take Lyft to Rolling Smoke, the Highland Drive location, since it's literally right down the street from the strip (and the Palazzo where I always stay when in Vegas.) Quick $4 Lyft trip and we're there. Came to get some grub on one of the hottest days of the summer (It was 115 degrees out and their ice machine was broke.) I ordered a 3-meat combo plate but because they were out of spare ribs, you either had to order chicken or hot links OR be forced to pay $3 extra for pork ribs. To me, that was bush league, why should we the customer be charged extra because you ran out of spare ribs? If anything, they should have absorbed that cost due to their lack of planning. It was July 3rd, so they should have figured an influx of patrons the day before 4th of July.
At any rate, I ordered the mac and cheese with my combo and had a seat. About 5 minutes later they delivered my plate to me (pictured below.) I should have known that so quick to get my plate, it would likely not be hot and rather, the meats likely already sitting on a heating lamp. Such was the case. Neither the porn ribs nor the brisket were hot. Heck, they weren't warm, either. They were room temperature. I would have taken it back and asked for hot meats, but I was famished, as I had just flown in, and wanted to eat ASAP, so I made do with what I got.
Moving forward, I'd be leary about this place, if they keep feeding you room temperature meat in favor of moving the line and selling low quality food. Having previously been to Franklin BBQ in Austin, TX, that remains the holy grail/standard for ribs and especially brisket. This time around, Rolling Smoke BBQ didn't compare.
