I've been to several Vietnamese restaurants in my day. You can't top California and Minnesota when it comes to traditional Vietnamese food.
So far, I've been to one place to serves decent spring rolls and pho. Unfortunately, that one place is not Pho Cao Restaurant and Bar.
Let's start with the pho, the dish by which all Vietnamese restaurants are judged. Their broth was not piping hot, which is a necessity for pho broth. On top of that, the broth had way too much star anise.
The cuts of meat were decent, I got my order at 11pm and didn't feel like I was getting the last of the beef slices (which can happen from time to time at these places).
I had to load up on hoisin, sriracha and lime to make the dish work for me.
The spring rolls were ok. Nothing to write home about, but not bad either.
Where this place really differs is that it has a full bar and attempts to meld Vietnamese dining with karaoke bar (think Geisha a-go-go).
All in all, I would not go back here unless it was late at night or I was in the mood for cocktails after some pho.
