| - I've heard so much about oyster bar, and many friends have said it has the best pan roast ever. I'm here to report that everything you may have heard is true (including the infamous wait times unfortunately, haha).
The palace pan roast is the best pan roast/gumbo/seafood stew/soup I've ever had. It beats any bouillabaisse, chowder, or other seafood soup I've ever had. Hands down, far and away, there is no comparison.
The flavor permeates your mouth. You will want to continue eating far past the point of being full. I had to walk away from my seat (literally) - that was the only way to stop eating it. It was warm, hearty, complex, delicate, and just simply perfection in a bowl. The Oyster Bar has captured lightning in a bottle. All of the ingredients come together to form a masterpiece. The brandy, cream, and tomato must go through a magical steam cooking process, because the result is accomplished, mesmerizing, and impeccable. It truly is something you must try for yourself in order to experience the phenomenon.

As I was chowing down, I must've eaten five or six shrimp. As I enjoyed each tender, succulent, meaty piece, I stopped to count how many were left. There were six more! I lost track, but there had to have been at least eleven decent sized shrimp in the pan roast. There was an abundance of sausage as well, which was very delicious and hearty. The crab was a little harder to find, but there was plenty of chicken.
I ordered spice level 3 (on a level of 1-10, with 10 being the most spicy). I'm the type of person that usually doesn't eat spicy food. I will eat spicy Korean soft tofu soup, for example, because it's much better that way. If you're a seasoned spice eater, you will want to get 6 or 7 at least, if not higher. The level 3 provided a slight kick for me, and wasn't too spicy.

I asked the employees several questions regarding the line and here's what I can report to you. You are allowed to have one person stand in line for a larger group, as long as the entire party is present when you're called. I waited in line so my four friends could gamble (one joined me halfway through the wait). When we got close to the front, I called the rest of them to come over. We went at about 11:30pm on a Wednesday night, and got seated around 12:30am. I would say the slower times are morning and afternoon. This place is open 24 hours a day, and it seems to be busier at night time.
I will make it a point to come here every time I go to Vegas. I want to try the gumbo, etouffee, and bouillabaisse. The problem is that the pan roast was so great that I might not want to deviate from it. I would travel to Vegas solely for the intent and purpose of eating here! I'll be back as soon as I can. In the meantime, I'll have to search southern California for comparable pan roasts.
