| - Despite the two-hour wait, I'm relieved to say it deserves the hype.
The Good
I love eel sushi and Soul makes the best eel roll I've ever had. It's served with no extra filling, which means you focus on the succulence and sweetness of the meat alone. Absolutely divine.
Soul also makes the best flatbread I've ever had. It's made with truffle whipped goat cheese, pistachio pesto, honey braised garlic, and fresh arugula.
The Not-So-Good
Oh my god, the wait. We went at about 8:00 on a Friday night and the hostess said it would be a 2.5 hour wait. We walked over to Workman's Friend instead. Determined to try it again, we came back the next night at about the same time. This time a 2 hour wait. Luckily we found bar stools to get comfortable and ultimately decided to eat at the bar.
We ordered mules. We were thrown off that it's served on tap. And way, way too sweet.
The shells and cheese, made with BBQ glazed pork belly, were unremarkable. I wish we ordered the pork belly tacos instead. The fried meatballs didn't wow me either.
So, in summary, a few items on the menu blew me away enough to still give Soul my 4-star rating. Order the eel, flatbread, and prepare yourself for the wait.
