I walked in this morning to pick up a steak and was met by a very helpful gentleman.
I informed him that I normally purchase ribeye cuts, but wanted to try another cut. He suggested the prime flat iron steak which he said had lots of flavor, but was also tender. It was priced at $13.99/pound which was cheaper than the ribeye so I decided to give it a shot.
I took a look at the steak and noticed that it had a good amount of marbling and a rich, vibrant red color. I definitely liked that the steak was vacuum sealed.
Around dinner time, I took the steak out of the fridge and let it come to room temp. I seasoned it with kosher salt/black pepper before searing it with my cast iron for 2 minutes on both sides. I then tossed it in the pre-heated oven (450 degrees) for 4 minutes. I finished the steak with a tiny bit of butter and.... voila!
I've used this method to cook various cuts, but it has never turned out this good. The fat rendered down well and it made the final product very tender. It had way more flavor than I usually expect from a home cooked steak. My girlfriend was also very impressed with flavor of this steak.
I am very glad I checked out branded meats
A) I found a new cut of beef that I really like (thanks to the gentleman working today)
B) I was very impressed with the quality of the beef here
