  • Tomatoes are red, Tamales fresh to order, For top notch Mexican, You go to the border?!? Go figure I'd start this review with a poem, but all joking aside Border Grill surprised me and really is poetry in motion! During a recent stay at Mandalay Bay we wound up here with back to back visits for lunch and dinner which pretty much speaks for itself. The wife had been wanting to eat here and I was hesitant because to me it seemed like a healthy alternative to Mexican food I'm used to, but I'm the end I would certainly return for more. So our first outing was for lunch and we had decided to sit on the patio area which overlooked the pool area so take note should you feel the need to people watch as you eat. With a Yelp check in they provide you a sampling of the green corn tamale which I did feel was a nice touch. The tomatoes tasted fresh and were pretty crisp and the sour cream was light and creamy, but the sweet corn for me didn't quite knock my socks off as I had hoped. To me it tasted identical to the one from El Torito which was a bummer. For the main attraction I set my sights on their tacos and of course I went for the "tres especial" dabbling in carnitas, spicy shrimp, and carne asada. The carne asada was actually very tender and the marinade complimented the meat very well giving it a little twang bite to bite. I must say the carnitas was a hit as the braised pork was melt in your mouth AND in your hand soft (take that M&M's). Lastly came the shrimp and what I enjoyed was the seasoning of the shrimp as it gave it a slight kick, but nothing too overpowering. For my dinner outing, since the tacos were all cooked to the nine I figured they knew how to cook their meat very well so I set my sights on the skirt steak. My only thought was being a mariachi band short of a fiesta as I didn't enjoy my experience at all with this one. I had asked for medium rare as I always do and it was extremely rough on the ends of my steak and towards the middle I had about two exceptional bites of tenderness, but it did appear borderline raw which even I won't mess with. I wanted to ask for a replacement yet didn't want to hold up the group so I dealt with it, but that was very disappointing. It's saying a lot if I found the roasted tomato a highlight of the meal! All in all, I'm delivering a rare three star experience mainly because of inconsistency between lunch and dinner..I feel it was just so-so overall of an experience and I'd be doing a disservice honestly if I said any different..I will be back again as my wife fell in love with border grill after both sittings. I'll cross my fingers in hopes I do the same!
