| - I want to like this place as the owner is so pleasant and is doing her best to make a difference on the scene in Las Vegas. The 'house-made' Sangria was pleasant enough, but not out of this world. The salad was also suitable, but nothing special. The chicken livers were wonderful - an acquired taste, presented well and flavored mildly.
The paella was a bit disappointing. First, it needs to be served "hot", not room temperature. The ingredients are terrific, but the preparation was off the mark. Chicken and chorizo must be cooked throughly, which they were, but perhaps off to the side and added in. The mussels were so-so, but not terrible. Calamari and baby octopus need garlic and olive oil in a separate saute, added to the chicken, chorizo & rice - with the prawns added at the last minute. These prawns were over-coocked and hard to extract from the shells.
All this said, I'll try Vila Algarve again with different selections. Has promise. Hoping for the best.
