| - Sushi and burgers prepared exactly the way you want? Yes, please! This concept seems a little confused at first glance but turns out to be pretty darned ingenious! Cowfish gets 4.5 stars (I'm rounding down because my order on my first visit was disappointing) for delicious food, generous portions, limitless variety, great ambiance and excellent service. I have been twice in one week since discovering it.
TIP: They're located on The Residences side of Southpark Mall so park in the adjacent parking structure for ease; trying to hunt down a spot right in the front of the restaurant is a futile exercise.
Fun ambiance, family-friendly. Dining inside the restaurant, you have a selection of high tops or semi-booths and a view of the saltwater aquarium; otherwise, you can sit on their patio, which is sprinkled with strategically placed fans and heaters. Just off the patio is a large fountain and relatively large lawn where I have seen kids sprawled about. We have opted for the patio both times that we came; it's a serene way to enjoy an outdoor meal.
Excellent service. We have been on a late Saturday afternoon when they were relatively busy and a Sunday afternoon, when it was pretty quiet. Albeit, the Sunday service was much more attentive, but it could be a result of a different server. The first time we came, our server was good but not memorable. However, on our second visit, Shelley really went above and beyond to ensure that we had everything that we needed and that our dining experience was delightful. We ended up ordering more than we could eat in one sitting and she painstakingly made sure that each sauce that accompanied our meal was packed accordingly.
Limitless variety. Their menu is expansive (it's literally several pages long; not quite as long as Cheesecake Factory but it's in that league) but the great thing is that everything is fully customizable; it's always disappointing when you see "no modifications or no substitutions" on a menu so kudos to them for encouraging you to ask for exactly what you want, how you want it.
Delicious food. Their portions are very generous so for those of you who, like me, have bigger eyes than your stomachs, take heed. It's not necessarily that the food is innovative or complex, it's more that the food is very flavorful and well prepared. Note that they do use imitation crab. I've had:

+++ rock shrimp. The shrimp is perfectly crispy on the outside and succulent on the inside. The very creamy sauce has just the right balance of spiciness and sweetness. It's served on a bed of lettuce, cabbages and cucumbers.
+++ seared sesame tuna. The tuna is extremely fresh with no fishiness to it whatsoever. It is served on a bed of seaweed salad and cucumbers, which is sprinkled with a ginger citrus sauce that is seriously divine. I brought this home; it was still delicious the next day.
+++ minis of the week. We added cheese and pickles to ours. The angus beef is juicy, even in this compact size. But the Cowfish sauce is what makes this amazing. It's reminiscent of Thousand Island but is much thicker and sweeter. I thought this was delicious and I don't really care for burgers much.
+++ beef bare burger. This burger was outstanding. The juiciness of the beef, the Cowfish sauce, it was just a stellar burger. Did I mention that I don't like burgers?? The fries were also flavorful and yummy.
+++ Mark's roll. This roll has tuna, jalapeño, cream cheese, Kano, scallions and is flash fried. It is topped with mayo and sriracha but a little bit of masago; a great crunch roll and not spicy at all. The ponzu dipping sauce was absolutely fantastic.

+++ yellowtail. My BF is obsessed with Zuma, his all-time favorite restaurant chain and their yellowtail is one of the things he craves. He's always on the hunt for a second runner up. The jalapeño and ponzu sauce are reminiscent but the cut of the yellowtail is too thick (they give you probably 3-4 times more than Zuma does) but I recommended that next time, he ask for tempura flakes or onion rings to add the Zuma crunch factor. In not comparing it to anything, I thought it was great.
+++ tropical storm roll. This roll is kind of a rainbow roll (CA, with fish on top), sprinkled with eel sauce but the thick yuzu dipping sauce just takes it to the next level.

+++ lobster and crab spring rolls. The spring roll is a misnomer because it's fried and there is just way too much flakey egg roll on the outside. If they reinvented this in traditional non-fried rice paper, this may be a winner.
+++ Dion's OMG roll. More like OMG I shouldn't have ordered a roll with coconut in it.
On our third trip on a Saturday afternoon, the service was mediocre; not stellar, not bad. The food was just as good as the other times so they're consistent there. Overall, we will be back for the burger | sushi combo when we crave a little of both.
