Best restaurant I've been to... this year.
We were seated right away and was instantly greeted by our server Jason. We only ordered sparkling water which Pablo, the best busser ever, never let me refill my glass on my own. For a starter, we ordered the beef tartare with quail egg, mustard seeds and freshly baked crostinis. I have been craving beef tartare and can never find it anywhere in Orange County that does it well- this one hit the spot nicely. We were given share plates by a beautiful Czech man wearing a well fitted suit named Robert (the general manager). I was very impressed by how hands-on he was and we both really enjoyed conversing with him. My girlfriend ordered the 35 hour wagyu short rib and I ordered the braised veal with polenta and carmelized cioppolini onion. Every component of both of our dishes merry so well together. Kudos to Chef Shawn McClain! For dessert, we took Jason's recommendation and ordered the foie gras candy bar. We even got a complimentary hot chocolate soup which was to die for when you pair it with the foie gras candy bar.
I've been seeing a lot of reviews and complaints about the prices. I thought the prices were very fair and to be expected with a beautiful restaurant like Sage, the level of service and the value of the food. You're in Vegas. Pay up!
