  • So I just discovered this awesome ORGANIC Farmer's Market Vendor. I'm a fan & I'll keep purchasing from them! Here's a tid-bit from their website: "Urban Hydro Greens is a local hydroponic farm in the Las Vegas, Nevada area, owned by Dennis and Nickie Vitali. We began in March of 2012, and already have many loyal customers in the commercial market and the consumer market. We currently offer microgreens primarily. Here is a little information about microgreens: Micro greens are baby plants that are extremely rich in flavor and nutrition. Micro greens are nutritious vegetable plants that are in their earliest leaf bearing stage of growth. Micro greens are filled with intense flavor, and are ideal for adding flavor and nutrition to salads, sandwiches, soups, main dishes, or as a garnish. Modern chefs and connoisseurs of foods are excited about using microgreens in their offerings, and they speak very highly of their value. Micro greens differ from sprouts because they are not grown submerged in water, and they are leaf bearing plants growing in their natural fashion which are 8 to 14 days old. Micro greens are served as stems and leaves. Roots are not consumed. Micro greens are extremely flavorful, and their colors are brilliant. Their nutritional value is unmatched, and they are rich in enzymes that facilitate digestion. Micro greens are especially healthy herbs and vegetables which have specific health-promoting and/or disease-preventing properties that are above and beyond their normal nutritional characteristics. As such, the demand for these luscious little greens is growing exponentially. Micro greens have been found to contain highly concentrated health promoting compounds at levels higher than those found in many mature plants. We feel that the main food supply in this country is less than desirable because of the chemicals used in growing and processing food for the grocery stores, and because of the growth hormones and genetically modified plant life used to support our mainstream food supply."
