Average coffee shop, but being in a spot with limited competition, I think it'll survive. Skimos Coffee has a very small town America feel. Nothing fancy, cliche coffee shop decorations and cafeteria style tables/chairs. The interior doesn't need to stand out if the coffee/food make up for it, but it sadly didn't. The prices were a little steep for what you were getting. I had the ice house coffee, it had a very sour aftertaste, which I should have asked about before ordering. Extra 75 cents for soy/almond milk. The orange cranberry muffin was good. Not too sweet, just perfect.
The owners were nice and it gave the small town interior a family feel. However "nice" soon turned into "fake." The owners spent a good half hour complaining about the customers who leave negative Yelp reviews and were even reading these negative reviews out loud. If you're going to complain about your customers, don't do it where we can hear.
There is a nice back portion with couches and tables that are perfect for studying. It's quieter in the back and even the music does not play back there. Music in the rest of the shop had jazz playing.
