| - I was intrigued by the reviews that indicated handmade noodles, and the storefront prominently advertises on its windows ?????, Lanzhou-style hand-pulled noodles, so I stopped in before my usual Sunday night meeting, hoping to make it in time, ordering a starter of pan-fried dumplings and the XO sauce beef fried noodles with shaved noodles as others have recommended. This is a technique where the noodles are shaved from a block of dough, and it can be pretty theatrical, but, wasn't here for the theater tonight. Both dishes came out pretty quickly. The dumplings were a meal in and of themselves, lightly pan fried, stuffed with seasoned beef, but a bit dry, and served with a kind of vinaigrette-like dipping sauce: recommend using that and also a combination of the black vinegar, soy sauce, and hot chili oil as well to taste. The noodles were very good -- I've only Chicagoland's Katy's Dumpling House to compare against -- possessed of a springy al dente texture that is the hallmark of the hand-pulled noodle and very well seasoned, but a bit light on the beef. Nevertheless, a carbolicious meal. Highly recommend.
