After bar surfing to find a decent Old Fashioned, we landed at the Vesper Bar. It's at the front of Cosmo (close to Valet and behind the front desk) and easy to miss so look for it as soon as you walk in the door or you'll walk past it. It's a little quaint bar but surprising in the level of mixology skill they have here.
I started with the Penicillin, which is scotch, lemon, honey & ginger. That was stout and very refreshing. I usually drink my scotch neat but it was nice to have it mixed into a cocktail like this. My friend had the WABI-SABI. Menu says: "Named for the Japanese aesthetic of beauty in imperfections, this magic bullet consists of Japanese Whisky, Honey Liqueur, Citrus, Coco-Chai Syrup & Islay Sesame Oil". This drink was really something. I wish it had a tad more alcohol in it but the flavors and complexity of taste was amazing. I could drink 2 or 3 of those.
Then we each had an old fashioned. It was not the best I've ever had but certainly the best I found all night. I think if I went back I could work with the bartender to get a better rye/bourbon balance. The service was a little slow but it was a Friday night. I liked the bartender but we had to flag someone down quite a few times. Would go back.
