Not bad! The dumplings remind me of stuff I might be able to get at home. I ordered their classic potstickers and a bowl of pork noodles. These are done in in the Chinese style - the dumplings have thicker skins and are pan-fried, while the soup noodle has thicker noodles, clearer and cleaner broth, and pork with bone. I will say the noodles could have been more savory, even if it's a soy sauce-based broth. The dumplings were really nice though, well-seared with a good crunchy base, and the meat filling has a nice savory helping of pork and veggies. It's probably the closest thing to real potstickers I've gotten in Madison yet. (It helped that I was able to speak Chinese to them, and they had vinegar which is the traditional sauce that goes with potstickers.)
If there's a life lesson to be drawn, it's that you should get dumplings when the place is called DumplingHaus.
