I try to stop by Red Sea whenever I'm in the Charlotte area. I don't have a ton of exposure to Ethiopian food but I know I like what Red Sea has to offer, and the staff are really friendly. The location seems pretty convenient to me, although I usually have to drive around the block from missing the entrance to the tiny parking lot.
I always order at least one of the combo dishes, and then usually add on another meat or vegetable. It's a little hard for me to distinguish what's what once the food comes out, but I love how they come out on top of injera so the sauces have a chance to soak in. The vegetable dishes are often my favorites, so I'd suggest this place as a good option for vegetarian friends. The food is also pretty inexpensive and very easy to share with friends.
The restaurant is tucked away into a tiny strip fairly close to downtown Charlotte and the atmosphere is hole-in-the-wall but very comfortable. I haven't had trouble finding parking yet either, so that's always a plus.
I'd recommend Red Sea for anyone interested in trying Ethiopian food, and definitely for people who prefer to eat vegetarian. I probably wouldn't bring a date here for a night on the town or anything, but it's a great place for casual food with friends.
