I enjoyed my trip to Paco's Tacos & Tequila, but everything I ate was just solidly good. It's about a 40 minute drive from my house, so unless it was a place that friends were wanting to meet, I wouldn't go out of my way to dine there. If I could have given a 3.5, I would have. I ordered Paco's Taco which came with Spanish rice, slaw, and a choice of beans. The taco itself was good and the first bite made me go, "Wow!" but apparently all of the sauce in my taco was in that one bite. After that, it sort of fell flat for me. The rice was okay, but the slaw was pretty dry -- like just shredded cabbage. I didn't taste the citrus or the chipotle in it. The side of Charro Beans was the most flavorful thing on my plate -- and I did enjoy them. The salsa at Paco's is also really good -- perhaps the rest of my meal just suffered by comparison.
