  • We decided to try Sage out after seeing Zarkana at Aria. We decided on the $89 signature menu. I chose the wagyu beef tartare with slow poached egg and chocolate, Maine dayboat scallops, the 48 hour beef belly and the lemon pie with chartreuse gelee, pistachio ice cream and toasted marshmallow. My favorite of the meal was the wagyu beef tartare. Very tasty and salty, but I love salt. The scallops and the beef belly were pretty good as well. I'm not saying this was a bad meal by any means, but it didn't blow me away. I feel that the meal was more about the presentation and look.
