| - Lovely little North-Eastern Chinese restaurant, here in the desert! Next to their telephone and the cash register is a glass-encased booth where they make their noodle products the old way by hand. I watched them make potstickers and dumpling, as they have for centuries, with delicious care. You can tell when you bite into one that it was not store bought but made at the moment, with the perfect chew and juicy flavor. You must come here to eat these heavenly morsels. I ate their potstickers and the pork and shrimp dumplings. Best I have ever had anywhere, and I have savored these tasty morsels in Bangkok and HongKong and the Chinatowns of New York, San Francisco, Seattle, and Vancouver! I had to remove one star for their rendition of Salt and Pepper Calamari, as they were tough and almost tasteless. I think you can eat any dish that has a noodle listing, all 14 of them, and the 14 listed noodle soups, and the 15 Hand Made Dumpling dishes on the menu, and not go wrong! I will be back to try them all.
