| - Dumpling Haus has the best northern Chinese food in Madison (bar none; there isn't any other). The owners William and Jenny are from Beijing, so all of the food is authentic (Jenny's aunts have a restaurant in Shantong province where they make 5,000 dumplings a day! Dumpling Haus has cracked 1000). I just returned to Madison from NYC and ate at two of the "best" Shanghai restaurants in Chinatown (dumplings) and they don't hold a candle to Dumpling Haus. Their Zha Zhiang Mein (noodles with black bean sauce) compares to the Zha Zhang Mein King restaurant in Beijing, the place to go.
Two things to the people who complain about price. First, it's in Hilldale Mall. Second, if you've paid any attention, the cooks are the same people everyday, skilled cooks, who make an actual living wage. They make all the dumplings there. They aren't frozen (Timo). So if you want real, good food, it has to be made by real, good cooks. If you want crap from a can, it will be cheaper. You can't have both, at least not in the U.S. (Yes, I know there are some exceptions in SF, but that's because they can hire skilled people at rock bottom wages). And I agree with the posters who say: rate the food, not the price. Mention the price if it bugs you.
Great dumplings and noodles. Worth the price.
