  • Heard so many great things about this place so I knew I had to try it when I was visiting Montreal for the long weekend. The restaurant atmosphere and service was fantastic. The food was good, really good.. although I admit I may have walked in with overly high expectations. To start, I ordered the Cromesquis de Foie Gras which came with two bite-sized pieces. The batter was perfectly crispy with the foie gras filling a smooth creamy texture. My initial thoughts were that the size was smaller than expected, however after eating the entire piece in one bite as per what the server suggested, I realized it was the perfect size. Anything larger and the filling to batter ratio would have been offset. Then came our foie gras poutine. This dish was all sorts of goodness. There was definitely a generous serving of foie gras in this dish and it tasted really good but I feel that some acidity to cut the fat would have made the flavours more balanced. Each bite was super creamy and salty (not a bad thing at all) but after half the poutine I felt that I needed a week-long cleanse. Totally worth it though. The last dish that we ordered was of course the Duck in a Can. I appreciate the innovation behind this dish as I have not heard nor seen a dish that is even remotely similar to this technique. The waiter explained that the ingredients are all cooked inside of the can for 40 minutes. Pretty cool. The contents of the can was then poured over a crispy crostini with carrot purée. I loved crostini as it added more texture to the dish. However I felt that was flavour of the broth/sauce in which the duck was cooked in quite one-dimensional. It reminded me of a stew with a bunch of different ingredients and soggy vegetables. This is not a bad thing, in fact the overall dish was quite yummy but I can't say it met my expectations especially after hearing so many people rave about this dish. I felt that the fat on the duck breast needed to be rendered down a lot more and I ended up just avoiding the skin all together. Portion wise, it was the perfect amount of food for a main course if shared with another person. Overall I found that this restaurant was a good experience and would recommend it to those looking for innovative dishes and a unique dining experience. I am curious about what else they offer and will definitely be returning.
