  • I am a big fan of Asian stir fry noodles, and Pho Nam is in the top 3 for me in the Madison area (along with Ha Long Bay and Monsoon Siam). I have eaten the seafood with rice noodles at Pho Nam three times, and I keep going back. The dish is loaded with fresh veggies and seafood. Many restaurants give you mostly noodles. Pho Nam is generous with veggies and seafood, with a good balance of noodles. Many restaurants overcook their seafood, such as squid, octopus and scallops. Pho Nam prepares these perfectly, cooked for a very short time to keep delicate seafood soft and juicy. The flavors are fantastic. My one request? More vegetarian options. It would be great if the lunch specials were offered with tofu or something. The only vegetarian lunch special is veggie pho (and noodles with broth are not my favorite). There are a lot of vegetarians in Middleton, some working at Epic. I don't work there, myself, but I have friends that do, and there are many people who do not eat pork (shocking, I know, to many--you know who you are).
